Apply Tags based on Checkbox in Order Form (Custom HTML)

Hi there,

We are using Custom HTML in our checkout form, that ask users for consent if they accept the T&C.
What is the best way to apply a tag based on that submission, which means we need to apply a tag to the contact that they checked the box while making a purchase. If successful we want to try some other checkbox for GDPR related stuff as well.

And can we change the label of the form fields?
Like Zip should be Zip or Postal Code: Screenshot by Lightshot
