Hi there! Is there a way to create a temporary opt-out option for folks - where they can choose not to get our emails for 30 days or something like that?
My only thought is to create a duplicate list which they can soft unsubscribe from and only send to that list for 30 days, but that doesn’t seem to be the most logical solution.

You are on the right track.
You would tag everyone in the system with “Newsletter List” (or whatever you want to call it).
Then, you would create a link that would take them to a web form where they could choose their selection (opt out for 30, 60, 90 etc days — or just 30 if that is your only option).
From there, after they choose their selection, you would put them into a sequence that would remove the “newsletter list” tag, have a 30 day delay timer, and then it would put the “newsletter list” tag back on them, and they would then start to get info again.
